*Lentil Dhal with Pineapple* - Serves 6

This can be made as a thin soup or thick to serve with rice or naan. Natural yogurt with dried mint(+chopped chilli) can be swirled on the top.

Ingredients

100g - 4oz red lentils

300ml water for thick dhal aprox 1/2pt

1 small onion chopped

1 clove garlic crushed

½ teaspoon turmeric and or curry powder ( I use both)

1 x tin (4 rings) pineapple in own juice

1 tablespoon of oil

Method

Fry onion and garlic in hot oil for 5 mins until soft.

Gently stir in and fry spices

Add tin of pineapple and juice

Add lentils and water

Bring to the boil reduce heat and simmer for 20 minutes – until lentils are soft and thick.

Season with pepper. ( and crispy fried onions )
